Three Cheese Chicken Casserole

January has flown by even with all the rainy and sunless days. It is during months like these that a warm casserole, a hot cup of tea, a good book or binging a T.V. series makes myself and many others happy. Growing up in a family of seven required many casserole dinners to make the food go farther. One of the family favorites was Three Cheese Chicken Casserole. My mother would cook a whole hen and then create this family favorite as it would provide leftovers. I used this same casserole when our children were at home as I could also create a second meal of Homemade Cream of Chicken Soup. I hope your family enjoys this recipe as much as we do! Bon Appetit!

Three Cheese Chicken Casserole

Cook one package of Wide Egg Noodles per Package Instructions and Drain Noodles and add to Casserole Dish.

Cook one Whole Hen until done in the Oven or on the Stove with Onions, Celery, Salt, Pepper and 3 tablespoons of butter. Let the Hen cool and then debone. Extra Chicken can be used for Chicken Salad Sandwiches or to create a Homemade Cream of Chicken Soup or another of your favorite Chicken Casseroles.

Add items below to the cooked and drained Egg Noodles and Stir together.
1 (10.75 oz) Can of Cream of Chicken Soup
½ Cup Milk + additional if needed
¼ Teaspoon Pepper
1 (12 oz.) Carton Cottage Cheese
3 Cups of Chopped Chicken
1 (12 oz. to 16 oz.) Fresh Publix Mild Cheddar Cheese Shredded
1 Cup Publix Shredded Parmesan Cheese

Cover Dish with Foil and Bake at 350 Degrees for 45 minutes

I have always loved cooking ever since I made my first cake with my father when I was 3 years old. I remember dragging my chair over to the counter and climbing up on the chair to watch the dry ingredients mix with the liquid ingredients in the electric mixer. I then pushed my chair over to the oven to watch the cake raise in the round pans and I was so mesmerized by the process. I liken this to receiving a new box of color crayons at Christmas which brightened my entire year as a child. I still smile as I look through paint chips or buy a box of crayons for my granddaughters.

You know that you have a GOD given talent when your husband decides to marry you because you can cook and because you can change the oil in your car. His Words not mine! My friends always ask for my recipes some of which I have personal created and others which I acquired from my friends and relatives over the years. These friends and relatives have asked me to create a cooktop so many times; yet I have not been able to find the perfect vehicle to create this cookbook as I always want to tell the story that goes with the creation of the recipe or the stories of Love that goes with the recipes that I have received. Therefore, today is born the Blog of Recipes of Love and Life.

We want Gigi’s Biscuits for breakfast! These biscuits are a hit with our granddaughters Margo and Emma  and they are so simple and easy to make. You can whip them up in 20-30 minutes from start to finish. When everyone comes to my house, they always look to see if we have leftover biscuits as they know that they can put them in the toaster or toss them in the oven with butter and cheese and have a hardy snack.

GiGi’s Biscuits Easy as 1, 2, 3:

1 Cup White Lilly Self-Rising Flour
2 Tablespoons Regular Blue Plate Mayonnaise
1/2 Cup Mayfield Reduced Fat Cultured Buttermilk

Mix together the 3 ingredients and add a little extra flour to make the dough less wet so that you can roll the dough into a ball.  Use the backside of your hand (your knuckles) as an imprint on the biscuits. Make sure the biscuits are touching so that they rise in the oven. Preheat Your Oven to 400 Degree and Bake at 400 Estimated 10-12 minutes.

Enjoy 2 Large Biscuits or increase the recipe for the number of biscuits desired.
